How to Make Paneer Spring Rolls

Ingredients to make Paneer Spring Rolls:
For pancakes:
Flour : 250 gms.
Flour to make paste : 5 to 6 tbsps.
Oil : 6 tbsps.
Salt to taste
For the filling:
Grated cheese : ½ cup
Crumbled paneer : 1 cup
Boiled sweet corn : ¼ cup
Thin sliced onion : ¼ cup
Coriander leaves : 2 to 3 tbsps.
Cumin seeds : ½ tsp
Chopped green chilies : 3 to 4
Salt to taste
Oil for deep frying
Method to make Paneer Spring Rolls:
For pancakes;
1. Sift the flour.add salt and make a dough like chapatti.
2. Mix 5 tablespoons flour and some water,make a paste.
3. Roll out 4 puris from the dough, now take a puri and apply a little oil on it and dust some flour than apply another puri over it. Again place a little oil and dust flour over it and top with the third puri.Once again spread oil and dust flour over it before placing the fourth puri.Now roll out all the four puris into a big chapatti.
4. Hit the tava a little. Put the chapatti over it. After a couple of seconds flip sides.
5. Make a non crispy chapatti and remove it.Now separate the chapattis immediately.
6. Repeat the same with the remaining dough. The pancakes are ready.
For the filling:
1. Mix together crumbled paneer, boiled corn, grated cheese and sliced onion.
2. Add chopped coriander, cumin seeds, green chilies and salt. Mix well.
To make the spring rolls:
1. In each pancakes place about 2 ½ teaspoons of filling on one edge.
2. Roll the pancake and seal the edges and sides with the flour paste.
3. Make more rolls with rest of pancakes.
4. Deep fry in hot oil. Cut into pieces and serve hot with chilly tomato ketchup and salad.
